Spring Rolls
Ingredients:
- Rice paper wrappers (spring roll wrappers)
- 1 cup vermicelli rice noodles, cooked and cooled
- 1 cup shredded lettuce
- 1 cup matchstick-cut carrots
- 1 cup cucumber, julienned
- 1 cup fresh mint leaves
- 1 cup cooked and shredded chicken (optional)
- Hoisin sauce for dipping

Prepare Ingredients: Ensure all ingredients are chopped, sliced, and ready for assembly.

Soak Rice Paper Wrappers: Fill a shallow dish with warm water. Submerge one rice paper wrapper at a time for about 15-20 seconds until it becomes pliable. Place it on a clean, damp kitchen towel.

Assemble the Filling: In the center of the wrapper, place a small portion of each ingredient – vermicelli noodles, lettuce, carrots, cucumber, mint leaves, and chicken (if using).

Roll the Spring Roll: Fold the sides of the wrapper over the filling, then fold the bottom part of the wrapper over the filling. Roll tightly from the bottom to the top, sealing the edges.

Repeat: Continue the process until all ingredients are used. Place the finished rolls on a plate, ensuring they do not touch each other to prevent sticking.

Cut and Arrange: Once all rolls are assembled, use a sharp knife to cut them in half diagonally.

Serve with Dipping Sauce: Prepare a dipping sauce by mixing hoisin sauce with a little water for desired consistency. Serve the spring rolls with the dipping sauce.
Tang Yuan Rice Balls
Ingredients:
- 1 cup glutinous rice flour
- Water (approximately 1/2 cup, for forming the dough)
- Filling of your choice (e.g., black sesame paste, red bean paste)
- Water for boiling
Instructions:
1. Prepare the Filling:
- If using store-bought filling, skip to the next step.
- If making your own filling, prepare the desired filling and shape it into small balls (about 1/2 inch in diameter). Set aside.
2. Make the Dough:
- Place the glutinous rice flour in a bowl.
- Gradually add water while stirring continuously until a dough forms. Adjust the water quantity as needed.
- Knead the dough on a floured surface until smooth.
3. Form Tang Yuan Balls:
- Pinch off small portions of the dough and flatten them into circles.
- Place a filling ball in the center of each dough circle.
- Seal the edges of the dough, ensuring the filling is completely enclosed. Roll it into a smooth ball.
4. Boil Tang Yuan:
- Bring a pot of water to a boil.
- Gently drop the Tang Yuan balls into the boiling water. Stir gently to prevent sticking.
- Cook until the Tang Yuan float to the surface, indicating they are done (usually 5-7 minutes).
5. Serve:
- Use a slotted spoon to transfer the Tang Yuan into a bowl of cold water briefly.
- Serve warm in a bowl with syrup or sweet soup of your choice.
